This Aglio Olio pasta is delicious and satisfying, and best of all, it's so easy to make.
We love to make Aglio Olio pasta at home because it’s easy and simple,
requiring only a few ingredients, but the result is a comforting and delicious dish. However, we like to elevate this dish by adding seafood to it. We’ve tried salmon and it’s really good but it’s also expensive. The next best option is to use shrimps, which also turned out nicely.
How To Make Aglio Olio Pasta with Shrimps
What you’ll need for the Aglio Olio Pasta with Shrimps
You just need to prepare a few simple ingredients to make a delicious plate of
Aglio Olio Pasta with Shrimp. You need pasta, of course. You can use fusilli,
penne, rigatoni, and spaghetti. We like to use either spaghetti or penne at home.
You also need garlic. For a half kilo of pasta, we use five cloves of garlic.
It’s up to you if you want to add more; the more garlic you use, the more
flavorful your dish will become. You also need one-fourth kilo of large
shrimps, a handful of parsley, good quality olive oil (you can use regular
cooking oil if this is what you have in your kitchen), pepper flakes
(optional), unsalted butter (optional), salt, and pepper.
For the kitchen equipment, you will need a toothpick, knife, spatula, frying
pan, pot, chopping board, and a serving dish.
Preparing and cooking Aglio Olio Pasta with Shrimps
What I like to do first is to prepare the shrimps. Wash them well until the fishy smell is gone. Sometimes, I like to wash them until the slippery feeling is removed.
Devein the shrimps using a toothpick. Pierce the shrimps through the third segment, just a little below the surface of the body, then lift the dark vein,
and pull it out. Discard the vein.
Next, peel the shrimps and take off the heads. Boil the heads and the shells in about a cup of water to extract the flavors. You can mash the shrimp heads to further draw the essence. Discard the shells and reserve the stock.
At this point, you can add the shrimps in the hot stock to cook them halfway.
I like to do this so that I won’t have to cook them too long when I finally add them to the sauce. If you cook shrimps too long, they lose their
tenderness.
Cook the pasta in boiling water with salt and oil. When the pasta is half-done, take it out of the water and set it aside. Reserve about a cup of
the pasta water.
Mince the garlic and the parsley, then set aside. Heat the oil in the pan and immediately add the garlic. Before the garlic turns golden brown, add the parsley. Cook until the parsley has wilted a little. Add the shrimp stock and reduce to about half its amount. Add the shrimps and cook for about 2 to 3
minutes or until the stock has reduced significantly.
Add the pasta and a little pasta water. Add butter if you want. Season with salt and pepper. Continue to adjust seasonings until you have achieved your
desired flavor.
Transfer to a serving plate and top with chili flakes. Enjoy while it’s hot!

Delicious and easy-to-do Aglio Olio Pasta with Shrimps.
Ingredients:
- Half kilo of spaghetti or penne pasta
- 5 cloves garlic, minced
- One-fourth kilo of shrimps
- A handful of parsley, minced
- 2 tablespoons of olive oil or cooking oil
- pepper flakes
- 2 tablespoons of unsalted butter
- salt and pepper
Instructions:
- Clean and devein shrimps, peel and remove the heads, then make a stock out of the shells and head. Cook the shrimps halfway in the hot stock.
- Cook the pasta halfway, remove from water and set aside. Reserve a cup of the pasta water
- Heat the oil in the pan then cook the garlic and parsley until soft and wilted.
- Add the shrimp stock, reduce the liquid, then add the shrimps.
- Add the pasta, a little pasta water, then the butter. Season with salt and pepper to taste. Serve on a plate and sprinkle with chile flakes. Enjoy! RATE THIS RECIPE

It may sound sophisticated but anybody who is comfortable in the kitchen can prepare this filling pasta dish. It’s also flexible because you can add or switch up the ingredients based on what you like.
You can serve Aglio Olio Pasta with Shrimps for your afternoon snacks or even
as a light dinner.
