Trying Kanin Club’s Crispy Dinuguan

Kanin Club's Crispy Dinuguan is one of the most unforgettable dishes that I recently tried.

I never thought that the classic dinuguan could be given a different twist but when I tried Kanin Club’s crispy dinuguan, I was immediately impressed. In fact, I loved it so much, that it was the only dish that I can recall during our dinner at Kanin Club.

Anyway, what is crispy dinuguan, you might ask? Basically, it’s regular pork blood stew but instead of stewing the meat into the sauce, the pork belly is made into lechon kawali – these are crunchy pieces of deep-fried pork belly; indulgent morsels composed of a delicious layer of meat, fat, and skin. That goes without saying that the meat is prepared separately from the pork blood sauce. Before it is served, the lechon kawali is mixed with the sauce and green chili.

It’s extremely flavorful and definitely sinful. Kanin Club claims that their crispy dinuguan can convert any dinuguan hater to love it.

After indulging on crispy dinuguan, I couldn’t help but feel guilty since I ate everything including the pork fat and that was because you wouldn’t be able to see what you were eating because of the dark sauce. It’s definitely good when eaten with rice.

On a different note, I noticed the interiors of Kanin Club at the Ayala Triangle Gardens was quite outstanding. The elements were mainly Filipino, with paintings and various pieces of artwork displayed inside, so the ambiance was generally homey and inviting.

I was invited by some friends to join them for dinner and since I had nothing else to do after work, I readily said yes. I’m glad I did because it was a great night spent over excellent food. Aside from the crispy dinuguan, I think we also had seafood kare-kare and gising-gising. Both dishes are also delicious but, again, I found the crispy dinuguan to be unforgettable.

All in all, it was indeed a delicious experience at Kanin Club.
